American Potato Salad

Ingredients

  • 1 bag Klondike Medley™ Potatoes
  • 1/2 mayonnaise
  • 4 hard-boiled eggs
  • 1/4 cup relish
  • 1 Tbsp mustard
  • 2 Tbsp freshly chopped dill
  • 1/2 cup green onion
  • Salt and pepper

Instructions

  1. Place potatoes in a pot of cold water and bring to a boil. Remove potatoes and chop into small cubes. Place potatoes in a bowl and gently fold green onion, relish, eggs, mustard, mayonnaise and dill without breaking potatoes. Add salt and pepper to taste.
  2. Cover mixture with plastic wrap and refrigerate for 24 hours. Finalize by garnishing the mixture with some freshly chopped dill and pepper.
